Appellation / Grape variety : Menetou-Salon / 100 % Pinot noir 

Nature of the ground : Terres Blanches 

Average age of vines : 30 years 

Wine making : The yield, about 50 hl/ha, is obtained thanks to the disbudding (“ébourgeonnage “) and the removing of green bunches of grapes (“éclaircissage”). Grapes are totally destemed and cold-macerate during approximately 48 hours. The alcoholic fermentation lasts about ten days between 25 and 30°C. The malolactic fermentation and the ageing are made in 600 liters barrels.
